Mamou Louisiana is one of those places that everyone knows is legendary but few know anything about the legend! Mamou’s legend is a fun one because it’s centered around the celebration of Mardi Gras and “The Chicken Run” that the men of Mamou put on every Fat Tuesday. Ultimately the unlucky chicken winds up butchered and in a pot of homemade Gumbo but not until his chef has visited several houses and collected the other ingredients from Mardi Gras revelers. This is the spirit of my Chicken Mamou Rub, it’s a Bright, Zesty, Fun seasoning blend that’s not going to ever be a salt & cayenne pepper fest. It’s a blend of Lemon, Peppers and Herbs that has one 1st Prize Trophies in Barbecue Chicken Cookoffs. This original recipe was then perfected for your kitchen and grill with 2 years of additional tweaking. Our family loves Chicken Mamou and knows that yours will too!
